Last weekend I thought I'd experiment with making a cheesecake for the first time. After much debating I figured that it would be fitting that an Oreo cheesecake should take my cheesecake making virginity, and alas I wasn't disappointed. It turned out and tasted great, so I thought I'd share how I did it so more people can enjoy it!
What you'll need:
(For an 8 inch pan, adjust as necessary)
-240g Original Philadelphia/other cream cheese
-Regular sized canister of whipped cream
-1/2 tsp vanilla extract
-3 tbsp melted butter
-3 tbsp icing sugar
-20 or so original Oreo cookies
-An 8 inch spring-form pan
Directions:
1. Place around 14 Oreo cookies into a sandwich bag and seal. Crush the cookies into tiny pieces until they reach the texture of sand, with no bigger pieces left. You can use any blunt object for crushing, for example a meat tenderiser or the bottom of a steal pot.
2. Pour out the crushed cookies into a mixing bowl and add the melted butter. Mix them together with a fork until they reach a single wet sand like consistency.
3. Pour the mixture into the bottom of your spring form pan. Spread and even out the mixture until it covers the whole bottom of the pan. This will be your cheesecake base. You can then place this in the fridge so the base hardens slightly as you work on the rest of the ingredients.
4. Add the Philadelphia into a mixing bowl. Add the vanilla extract and icing sugar and mix together the mixture with a fork or whisk. Start to add in squirts of whipped cream and mix in. Keep adding in whipped cream until the mixture reaches a thick, creamy consistency. I wasn't actually sure of how much whipped cream to add so I kept adding a bit and then tasting the mixture with a separate teaspoon until the cheese taste became dull, so feel free to do the same!
5. Crush a couple more Oreos and add the pieces into the creamy mixture, mix in fully and evenly.
6. Now pour the mixture into the pan on top of the Oreo base. Even out and flatten the mixture with a silicone spatula or spoon on top of the base.
7. Place the cheesecake into the fridge to set. I recommend leaving it over night, but 5+ hours could do the trick.
8. Once your cheesecake is set all there is left to do is decorate! I copped out slightly by just breaking up Oreo cookies into pieces and placing on top of the cheesecake at random, but feel to be more inventive.
